Pecorino

Pecorino is an ancient white grape variety, whose origin is still disputed between Abruzzo and the Marche. The grapes are harvested by hand in the early hours of the morning and brought to the cellar in small boxes. The grapes are gently pressed and fermented at a controlled temperature in steel vats.
It is bottled between December and January.
It is a fresh and easy wine to drink. Its bright yellow color with green reflections is the prelude to a fragrant sip with a marked acidity. Intense citrus scent found in every sip with an intense final flavor. On the palate it is enveloping, fresh and full-bodied.

Culinary pairings

Dumplings with asparagus, bacon and crunchy breadcrumbs, chitarrina beans, peas and Farindola pecorino, seafood risotto and bottarga.
